Slow Cooker Chicken and Wild Rice Soup Recipe (Gluten & Dairy Free)





HeY all
I made a really awesome Chicken and Wild Rice Soup in the slow cooker the other night for Katie and I. We wanted something light but tasty and this soup MORE than hit the spot! Definitely on the list of a repeat recipe! If you try it out let me know what you think!

INGREDIENTS: 
-1 Medium Onion, chopped
-3 Carrots, peeled and chopped
-3 Celery stalks, chopped
-3 Garlic cloves, finely chopped.
-1 Cup of uncooked wild rice
-2 Bay leaves
-1/2 tsp dried thyme
-Celtic Sea Salt and black pepper to taste
-4 Boneless chicken breasts
-10 cups of organic chicken broth
-1/4 cup of fresh, chopped parsley

DIRECTIONS:
- In slow cooker, combine onions, celery, carrots, garlic, wild rice, bay leaves, thyme, salt and pepper. Top with chicken breasts and add broth.
-Place lid on slow cooker and cook on low setting for 6 1/2 hours  or on high for about 3 1/2 hours.
-Carefully remove chicken and shred with 2 forks. Return chicken to the slow cooker and stir.
-Remove bay leaves, add parsley and season with additional salt and pepper as needed.
