Chocolate Chip Peanut Butter Brownies! (Gluten Free)



Hey Guys! Sorry for the lateness of this recipe. Better late than never. These are my go to dessert for parties and holidays! So good you will never guess they are gluten free! If you make them let me know how they came out!!

Ingredients list
-6 tbsp butter, melted 
-3/4 cup brown sugar, firmly packed
-1/4 cup granulated sugar
-3/4 cup peanut butter
-2 eggs
-1 tsp vanilla
-1 cup gluten free Bisquick
-1 cup chocolate chips (or peanut butter chips or a mixture of both)
-2 additional tbsp of chocolate chips to sprinkle on top

Instructions
-Preheat the oven to 350°F (or 175 °C) and grease an 8x8, 9x9 or 7x11 inch pan and line the bottom with parchment. 
-In a large bowl mix the butter and both sugars together until well combined.  Add the peanut butter and continue mixing.  Once the peanut butter is well incorporated beat in the egg and vanilla. 
-Add the Bisquick, switch to a rubber spatula and stir the wet and dry ingredients together until everything is well incorporated then stir in the chips until they’re well dispersed. 
-Spread the batter evenly along the bottom being careful not to disturb the parchment paper.  
-Scatter the reserved chips evenly over the top and bake for 30-35 minutes or until the brownies are a deep golden color and a toothpick inserted comes out clean. 
-Let the brownies cool completely then refrigerate them to solidify even further and make them sturdier for slicing.  Use a serrated knife to slice them into whatever size you’d like.

Sesame Beef and Broccoli Stir Fry (Gluten & Dairy Free)


Hey all. Put together an awesome recipe tonight for a Beef and Broccoli Stir Fry. Really delicious. Super easy and QUICK. If you guys try it out let me know how it comes out!!! ~Mike

Ingredient
1 tablespoon sesame oi
1 tablespoon olive oil
2 cloves garlic, minced or pressed
1 tablespoon grated/minced fresh ginger
1- 1½ pounds beef tenderloin or top round steak, sliced into thin strips
1 tablespoon sesame seeds, plus more for serving
3 tablespoons gluten-free soy sauce
¼ teaspoon black pepper
1 tablespoon corn starch
½-1 cup beef broth
Cooked brown rice
Fresh Organic Broccoli
Instructions
-In a large skillet or wok, heat the sesame and olive oils over medium heat. Add the green onions, garlic and ginger and cook until fragrant; about 2 minutes. Add the beef and sesame seeds and cook for 5 minutes or until beef is browned, add broccoli cook until tender. stirring frequently.
-When beef is brown, add the soy sauce and black pepper and stir to deglaze the pan.
-Dissolve the cornstarch in ½ cup beef broth and add to the pan. Simmer until the sauce thickens, adding more broth if necessary.
-Spoon over cooked rice, top  sesame seeds and enjoy.

Gluten/Dairy Free Pumpkin Pecan Cake Squares Recipe

Hey all!
Did some gluten free baking yesterday. This is a variation of my girl Katie's recipe. Its delicious! Gluten/Dairy Free but not to be overindulged if you are trying to lose weight!!! But a treat nonetheless. Easy recipe. Enjoy

Ingredients:
-30oz. Can of Gluten Free Pumpkin Mix (not plain pumpkin)
-Box of Gluten Free Yellow Cake Mix
-1/2 Cup of Earth Balance Dairy Free Butter cut into 1/4 inch cubes
-1  Cup of Chopped Pecans

Directions:
-Preheat oven to 350 degrees F. Spray 13x9 pan with cooking spray.
-Spread pumpkin pie mix in pan. Sprinkle dry cake mix evenly over pumpkin. Sprinkle butter chunks and pecans over cake mix.
-Swirl butter knife through mixture. Turn pan 1/4 turn and repeat.
-Bake 50-60 minutes or until lightly browned and top is set.

Dig in!!!
