Baked Tacos (Gluten/Dairy Free)



Made this recipe today and brought it over my parents and it was a huge hit. So quick. So easy. Soooo delicious.

INGREDIENTS:

-2lbs. Lean Ground Beef
-1 Can of Refried Beans
-2 Cups of Manchego Cheese or Dairy Free Cheese of Your Choice
-8oz. Organic Tomato Sauce
-18 Hard Corn Taco Shells (double check to varify gluten free)
-1 Package of Gluten Free Taco Seasoning
OPTIONAL TOPPING FOR SERVING: Lettuce, Dairy Free Sour Cream, Fresh Salsa, Hot Sauce, Avocado, Black Olives Ect...

DIRECTIONS:
-Brown beef in large skillet, drain off fat.
-Add refried beans, organic tomato sauce and GF taco seasoning.
-Spoon meat mixture into taco shells.
-Stand up shells in a 9x13 baking pan.
-Sprinkle manchego cheese into each taco shell.
-Bake at 400°F for 12 minutes.
-Serve with desired toppings

A Negative Is Just A Positive From A Different Perspective

Lying in bed tonight and my back is throbbing. I messed it up quite a bit this week. But there is positive to be found even in misery. I was in bed and in pain so I came out into the living room and threw on one of my favorite albums: Evan Dando (from the Lemonheads) "Baby Im Bored" and its a great soundtrack to my sleepless night. Im still in pain but at least Ive got some great music to keep me company. You must force yourself to find the positives in any given situation. Im not gonna feel any better telling myself over and over how miserable I am. Its all about perspective my friends. Positivity is alot easier on the mind than negativity. Its the basis for this whole site. The 90 Percent. In any situation no matter how dire, good things can be found. It just takes a different point of view sometimes. Remember every day above ground is a good one. Dont let the negativity consume your throughts. Even the darkest night has its dawn. Live the 90 Percent my friends!!!

Chocolate Chip Peanut Butter Brownies! (Gluten Free)



Hey Guys! Sorry for the lateness of this recipe. Better late than never. These are my go to dessert for parties and holidays! So good you will never guess they are gluten free! If you make them let me know how they came out!!

Ingredients list
-6 tbsp butter, melted 
-3/4 cup brown sugar, firmly packed
-1/4 cup granulated sugar
-3/4 cup peanut butter
-2 eggs
-1 tsp vanilla
-1 cup gluten free Bisquick
-1 cup chocolate chips (or peanut butter chips or a mixture of both)
-2 additional tbsp of chocolate chips to sprinkle on top

Instructions
-Preheat the oven to 350°F (or 175 °C) and grease an 8x8, 9x9 or 7x11 inch pan and line the bottom with parchment. 
-In a large bowl mix the butter and both sugars together until well combined.  Add the peanut butter and continue mixing.  Once the peanut butter is well incorporated beat in the egg and vanilla. 
-Add the Bisquick, switch to a rubber spatula and stir the wet and dry ingredients together until everything is well incorporated then stir in the chips until they’re well dispersed. 
-Spread the batter evenly along the bottom being careful not to disturb the parchment paper.  
-Scatter the reserved chips evenly over the top and bake for 30-35 minutes or until the brownies are a deep golden color and a toothpick inserted comes out clean. 
-Let the brownies cool completely then refrigerate them to solidify even further and make them sturdier for slicing.  Use a serrated knife to slice them into whatever size you’d like.

Sesame Beef and Broccoli Stir Fry (Gluten & Dairy Free)


Hey all. Put together an awesome recipe tonight for a Beef and Broccoli Stir Fry. Really delicious. Super easy and QUICK. If you guys try it out let me know how it comes out!!! ~Mike

Ingredient
1 tablespoon sesame oi
1 tablespoon olive oil
2 cloves garlic, minced or pressed
1 tablespoon grated/minced fresh ginger
1- 1½ pounds beef tenderloin or top round steak, sliced into thin strips
1 tablespoon sesame seeds, plus more for serving
3 tablespoons gluten-free soy sauce
¼ teaspoon black pepper
1 tablespoon corn starch
½-1 cup beef broth
Cooked brown rice
Fresh Organic Broccoli
Instructions
-In a large skillet or wok, heat the sesame and olive oils over medium heat. Add the green onions, garlic and ginger and cook until fragrant; about 2 minutes. Add the beef and sesame seeds and cook for 5 minutes or until beef is browned, add broccoli cook until tender. stirring frequently.
-When beef is brown, add the soy sauce and black pepper and stir to deglaze the pan.
-Dissolve the cornstarch in ½ cup beef broth and add to the pan. Simmer until the sauce thickens, adding more broth if necessary.
-Spoon over cooked rice, top  sesame seeds and enjoy.

Gluten/Dairy Free Pumpkin Pecan Cake Squares Recipe

Hey all!
Did some gluten free baking yesterday. This is a variation of my girl Katie's recipe. Its delicious! Gluten/Dairy Free but not to be overindulged if you are trying to lose weight!!! But a treat nonetheless. Easy recipe. Enjoy

Ingredients:
-30oz. Can of Gluten Free Pumpkin Mix (not plain pumpkin)
-Box of Gluten Free Yellow Cake Mix
-1/2 Cup of Earth Balance Dairy Free Butter cut into 1/4 inch cubes
-1  Cup of Chopped Pecans

Directions:
-Preheat oven to 350 degrees F. Spray 13x9 pan with cooking spray.
-Spread pumpkin pie mix in pan. Sprinkle dry cake mix evenly over pumpkin. Sprinkle butter chunks and pecans over cake mix.
-Swirl butter knife through mixture. Turn pan 1/4 turn and repeat.
-Bake 50-60 minutes or until lightly browned and top is set.

Dig in!!!
