Mike@90%: Healthy Peanut Butter Oatmeal Cookies (Gluten & Dairy Free)


My girl Katie made some awesome clean cookies. They are awesome. And pretty easy!!! Check out the recipe and feel free to share and comment!!! Thanks to my girl Katie Nolan!!!

HEALTHY PEANUT BUTTER OATMEAL COOKIES

INGREDIENTS:
2 Ripe Bananas, Mashed
1/3 C. Reduced Fat Peanut Butter
2/3 C. Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
Dash of Ground Cloves
Dash of Ground Nutmeg
1 1/2 C. Gluten Free Old Fashioned Oats
1/4 C. Nuts (I used dry unsalted peanuts.)
1/4 C. Semi Sweet Chocolate Chips
1/4 C. Reduced Fat Unsweetened Shredded Coconut (Optional)

Directions:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Mix together the bananas, peanut butter, applesauce, vanilla, and spices. Add in the oats, nuts, chocolate chips, and coconut; stir until well combined.

Spoon a rounded 2 tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each and flatten slightly. I placed a few more chocolate chips on top of each cookie. Bake for 20-30 minutes and allow to cool slightly.

Slow Cooker Chicken and Wild Rice Soup Recipe (Gluten & Dairy Free)





HeY all
I made a really awesome Chicken and Wild Rice Soup in the slow cooker the other night for Katie and I. We wanted something light but tasty and this soup MORE than hit the spot! Definitely on the list of a repeat recipe! If you try it out let me know what you think!

INGREDIENTS: 
-1 Medium Onion, chopped
-3 Carrots, peeled and chopped
-3 Celery stalks, chopped
-3 Garlic cloves, finely chopped.
-1 Cup of uncooked wild rice
-2 Bay leaves
-1/2 tsp dried thyme
-Celtic Sea Salt and black pepper to taste
-4 Boneless chicken breasts
-10 cups of organic chicken broth
-1/4 cup of fresh, chopped parsley

DIRECTIONS:
- In slow cooker, combine onions, celery, carrots, garlic, wild rice, bay leaves, thyme, salt and pepper. Top with chicken breasts and add broth.
-Place lid on slow cooker and cook on low setting for 6 1/2 hours  or on high for about 3 1/2 hours.
-Carefully remove chicken and shred with 2 forks. Return chicken to the slow cooker and stir.
-Remove bay leaves, add parsley and season with additional salt and pepper as needed.

Mike@90% Taco Pie Recipe (Gluten Free/Dairy Free)




INGREDIENTS:
•1 pound ground chicken or ground turkey
•1 medium onion, diced
•1 can black beans, rinsed and drained
•1/2 cup salsa
•1 package of taco seasoning (gluten free)
•3/4 cup gluten free Bisquick
•3 eggs
•1 1/4 cups almond milk
•2 ounces manchego cheese, grated

DIRECTIONS:
•Preheat the oven to 400 degrees F (or 205 degrees C) and grease a 10-inch deep dish pie plate.
•In a medium skillet over a medium high heat, crumble and brown the ground chicken with the onions.
•Add the salsa, beans and taco seasoning then stir to combine. Allow it to cook for a minute or two until the bottom of the pan looks dry. You don’t want to introduce extra liquid into the pie or it may not set properly.
•Spread the meat mixture into the bottom of the pie plate.
•Whisk the almond milk, eggs and GF Bisquick together until smooth. Pour the batter over the meat mixture.
•Bake it for 30 minutes then remove it from the oven, sprinkle on the 2 ounces grated manchego and bake for an additional 10 minutes.
•Allow the pie to cool for 5 to 10 minutes before slicing. Top it with garnishes you’d like and serve.
ADDITIONAL TOPPINGS:
•Additional salsa
• Olives, chopped
• Scallions, chopped
• Additional grated manchego
• Diced tomatoes
• Guacamole
Or whatever floats your boat!

Mike@90% Smoothie Awesomeness!!!


Hey all. 
My brother Steve asked me to share my Smoothie recipe that is a morning staple at the Mike@90% Northeast Accountability Crib. This packs in your daily servings of fruits and veggies into one single blender. Its delicious too. Some people get thrown when you tell them you put spinach and carrots into your smoothie but the sweetness of the fruit completely masks the taste of the veggies and it is a delicious and healthy smoothie that would be an AWESOME addition to your morning routine. Thats why this smoothie is my Mike@90% Smoothie AWESOMENESS. Gluten & Dairy Free

INGREDIENTS:
-Generous Handful of Organic Baby Spinach
-6 Fresh Organic Strawberries
-16 Organic Baby Carrots
-1 Cup of Frozen Organic Blueberries
-1 Organic Banana
-1/2 Cup of Almond Milk (I use Vanilla Almond Milk, perfectly adds to the flavor of the smoothie)
-1 Cup of Ice

DIRECTIONS:
-Combine all ingredients into a large blender and blend until smooth and completely combined.
-Serve in individual glass (I use chilled glasses for a nice brisk smoothie)

MIKE@90%: Slow Cooker French Dip Au Jus w/ Hand Cut Seasoned Baked French Fries (Gluten & Dairy Free!)


Hey my friends. I've gotten a lot of requests for this recipe I promised I'd post a few days ago. Not gonna lie, this may be one of the best things I have ever cooked! The meat literally shred apart with a spoon. So tender and the au jus was amazing. I got some really good gluten free french bread from a local bakery. You will want a quality bread for this sandwich. If you try it out let me know what you think!

FRENCH DIP AU JUS:

Ingredients:
-3-4 lb boneless beef chuck roast (thawed)
-1/2 cup gluten-free soy sauce
-1 tsp. beef bouillon (make sure its gluten free. I use the Herb Ox brand)
-1 tsp. garlic powder
-3 cups water
-Gluten Free French Rolls, Hoagies, Baguettes
-Manchego Cheese (sliced)

Directions:
-Trim away extra fat from the outside of the roast. Place the roast in a slow cooker.
-In a measuring glass, measure the soy sauce. Stir the bouillon and garlic powder into the soy sauce. Pour the mixture over the roast.
-Using same measuring cup, add 3 cups of water to the slow cooker.
-Place lid on slow cooker and set to cook on LOW heat for 8-10 hours, or until meat is very tender. Meat should shred easily with a fork when done.
-After cooking, remove the meat from the broth. Slice the meat with a knife if you prefer slices, or shred with two forks if you prefer shredded.
-Layer meat on sandwich roll to desired thickness. Add thinly sliced manchege cheese cheese.
You can serve immediately, or you can broil them to melt the cheese and toast the bread (I highly recommend broiling it!!!).
-Spoon broth from slow cooker into cups and serve with sandwich for dipping!!!

HAND CUT SEASONED BAKED FRENCH FRIES (Gluten & Dairy Free)

Ingredients
-3 Large Baking Potatoes
-Olive Oil
-Paprika
-Garlic Powder
-Onion Powder
-Chili Powder

Directions:
-Preheat oven to 450 degrees F.
-Cut Potatoes into wedges
-Place potatoes in a baking pan.
-Drizzle with olive oil and toss untill well combined and evenly distributed. Sprinkle a liberal combination of paprika, garlic powder, onion powder and chili powder to fit your personal taste.
-Bake for 40 minutes at 450 degrees F.

Mike At 90 Percent Slow Cooker Meatballs (Gluten & Dairy Free)



Mike At 90 Percent Slow Cooker Meatballs (Gluten & Dairy Free)

2 lbs of lean ground beef
3 large eggs
1 tsp of sea salt
1 tsp of Italian seasoning
pinch of dried basil
1 tsp onion powder
1/2 tsp of garlic powder
1/2 cup of gluten free bread crumbs homemade or packaged from the store
2 1/2 tbsp of grated pecorino romano cheese
1/4 tsp of ground black pepper

-Preheat oven to 450 degrees F and line two 9 x 13 baking sheets with parchment paper.
-In a medium size mixing bowl, combine ground pork, ground beef, eggs, seasonings and bread crumbs with a large spoon or by hand till well combined.
-Roll the meat mixture into 1 1/2 to 2 inch balls and place on lined baking sheets. Bake for 15 minutes or until golden brown.
- Add either homemade tomato sauce or a jar of gluten free spaghetti sauce to slow cooker.
-Place the cooked gluten free meatballs on paper towels and soak up any extra grease.
-Add to your sauce and simmer on low for 4-5 hours till done and all the flavors have time to meld!!!
-Serve with gluten free pasta

Mike@90 Breakfast Pizza (Gluten & Dairy Free)





Hey All.
As promised here is the recipe that I did for the Gluten Free/Dairy Free Breakfast Pizza that I made for Katie and I yesterday morning. Im just gonna share what I used and how I put it together and you can just add as much or as little of the ingredients as you feel like.

MIKE AT 90 BREAKFAST PIZZA (GLUTEN/DAIRY FREE)

INGREDIENTS:
-GF Pizza Crust Mix of Your Choice (We used and endorse Namaste brand Pizza Crust)
-Organic Cage Free Eggs
-Organic Turkey Breakfast Sausage
-Organic Bacon
-Unsweetened Almond Milk
-Freshly Shredded Manchego Cheese
-Grated Pecorino Romano Cheese

DIRECTIONS:
-Prepare GF pizza crust according to instructions.
-Preheat the oven to 450 degrees
-Beat eggs with unsweetened almond milk and scramble on stove top. Set aside
-Cook turkey sausage and bacon until cooked through. Set aside
-Sprinkle a layer of pecorino romano cheese followed by a layer of shredded manchege cheese on the prepared crust
-Add a layer of scrambled eggs to cover the entire crust.
-Cut sausage into slices and cut bacon into one inch pieces. Distribute throughout the pizza crust.
-Top with another layer of grated pecorio romano followed a generous layer if shredded manchego cheese covering the entire pizza.
-Bake for 10-15 minutes or until cheese is melted and crust is browned.
-Cut into slices and DIG IN!!!

Peanut Butter Granola (Gluten & Dairy Free)




INGREDIENTS:
2 Tbsp. Organic Peanut Butter
2 Tbsp. Organic Honey
1/4 tsp. Cinnamon
1/4 tsp. Vanilla Extract
1 Cup Oates

DIRECTIONS:
-Preheat oven to 325 degrees. Spray cookie sheet with non stick cooking spray and set aside.
-Combine peanut butter and honey in a bowl and microwave until peanut butter melts. Stir.
-Stir in cinnamon and vanilla into peanut butter and honey mixture.
-Add Oates and stir until oates are completely covered in peanut butter mixture.
-Spread out oat mixture onto prepared cookie sheet and bake for 7-8 minutes until granola is slightly browned.
-Let cool until granola is crunchy.

-Dig in!!!
